These homemade Sausage Patties will be done frying by the time you’ve finished scrambling the eggs!

Even though we home cooks pride ourselves on making everything from scratch, I have to admit that there are a few things that I prefer to buy because, frankly, they are better than the results of my attempts to make them. Of course, croissants and puff pastry immediately come to mind. I’ve tried to make both, and let me just say I’m better off buying these items. I used to feel the same way about breakfast sausage, a morning staple around here and something I never thought about making myself. I just figured that making sausage patties would require time and skills I did not possess. Guess what? I couldn’t have been more wrong. This recipe for sausage patties is so easy and so delicious. My crew likes these better than the ones I’ve been buying for years. Team Homemade for the win!
One of the truly beautiful things about these sausage patties is that they don’t contain any filler whatsoever. No breadcrumbs or flour or potato starch or even egg. The only ingredients in this recipe are ground pork, spices, and a bit of brown sugar. You can’t get much more pure or natural than that. And the key to the delicious taste is the sage. I know we associate sage with Thanksgiving, but it is a distinctive flavor in breakfast sausage. Who knew?
Well, we do now! We’re also adding garlic powder and dried thyme, as well as salt and pepper. The mix of these savory, herby flavors is balanced by the sweetness of the sugar, and all of the flavors infuse the meaty ground pork. It takes just minutes to cook the sausage patties until they form that wonderful brown crust, which is part of what makes them so delicious.
We love this recipe for sausage patties, but, you know, different strokes for different folks. Some people don’t like to cook with sugar, and if that is you, try adding a small amount of this Spiced Maple Syrup instead (added bonus: your sausage patties will also have notes of warm fall spices and a bit of citrus, too—delish!). And if you don’t want any sweetness in your sausage patties, omit the brown sugar altogether. Instead, if you want a little kick, sprinkle some of this Creole Seasoning into the ground pork and spice mix.
Perfect Sausage Patties
Start by bringing your ground pork to room temperature. Cold ground meat is harder to mix! Next, combine the salt, pepper, herbs and spices, and the brown sugar together in a bowl. That way, when you mix it into the pork, the flavors will be distributed evenly. If you have time, place your formed patties on a parchment-lined baking sheet and stick them in the refrigerator for about 15 minutes. This will help them keep their shape during cooking. In step three of our recipe, it says to add a little oil to your pan, if necessary. Ground pork contains a lot of fat, which will get released into the skillet once you start cooking, but, that said, if you’re not using a nonstick pan, you should add a small bit of vegetable oil.

Serving Suggestions
A classic, traditional American breakfast gets elevated when you include homemade sausage patties. Serve them with some Sunny-Side-Up Eggs, crispy Hash Browns, and slices of toasted Bread with Whipped Butter. Or get creative with some breakfast sandwiches! Place an Over-Hard Egg on the bottom of an English Muffin that’s been spread with some tangy Ranchero Sauce, add your sausage patty, cover the patty with a slice or two of pepper jack cheese, and then put a dollop of Avocado Crema on top before closing the sandwich with the top of the English muffin.
