Sometimes, a light bulb just goes off. That’s what happened to me when I came across this recipe for a mac and cheese sandwich. Though not right away. At first I thought, huh? And that’s when it hit me: putting my favorite pasta dish inside my favorite sandwich is a genius idea!
And I’m telling you, there’s nothing like it. I don’t think I know anyone who doesn’t love a grilled cheese, and I know I don’t know anyone who doesn’t love macaroni and cheese. But I know lots of people who would never think of putting them together into one dish. I was one of those people, but now I’m here to say that grilled cheese and mac and cheese are a marriage made in sandwich heaven.
You’ve got the buttery, crunchy grilled bread, the sharp, melty cheddar, and the creamy, tangy mac and cheese. At first bite, you’ll agree that the flavors and the textures are just completely dreamy. And you can make it all the time because once you have your mac and cheese, the sandwich takes just minutes to prepare.
You can do a simple Stovetop Macaroni And Cheese or a Creamy Baked Mac And Cheese, or even a Spicy Corn And Bacon Macaroni And Cheese. Any one of these is absolutely delicious in a mac and cheese sandwich.

The Perfect Mac and Cheese Sandwich
I think we all know how to make a Grilled Cheese, but here are some tips for making the perfect mac and cheese sandwich. Start by using softened butter for easy spreading, and cover the entire surface of the bread for even browning. Choose a sturdy bread, such as Sourdough or Pretzel Bread (though we love these on Cheese Bread, too), cut into thick slices. Both the cheddar slices and the mac and cheese should be at room temperature (if using leftover mac and cheese, warm it a bit in the microwave before filling the sandwich). Cook the sandwiches on medium to medium-low heat so that the cheese has time to melt and the bread can turn a crispy golden brown.

How Do I Store Leftovers?
Mac and cheese sandwiches are best eaten as soon as they come out of the pan, but, that said, you can wrap them tightly in plastic wrap or foil, and they will keep in the refrigerator for 3-4 days. To freeze them, wrap the sandwiches in parchment paper and then put them into an airtight container. They will keep this way in the freezer for up to 3 months.

They are so delicious stuffed with leftover shredded Oven-Roasted Beef Brisket or Sweet Slow-Cooked Pulled Pork. I also love to keep them vegetarian by adding Roasted Peppers or slices of Fried Eggplant or Fried Green Tomatoes (though when I do these, I always spread the inside of my bread with Pimento Cheese).

Mac And Cheese Sandwich
Ingredients
- 2 tablespoons butter softened
- 4 slices of thick-cut bread
- 4 slices white cheddar cheese
- 1 cup prepared macaroni and cheese
- Salt and pepper to taste
Instructions
- Evenly apply butter to one side of each slice of bread.

- Lay 2 slices of bread, butter side down, on a cutting board. Add a slice of white cheddar cheese on top of each.

- Spoon half of the prepared macaroni and cheese onto each sandwich over the cheese slices. If desired, sprinkle with salt and pepper.

- Place another slice of cheddar cheese over the macaroni. Cover with the remaining bread slices, butter-side up.

- Heat a skillet over medium heat. Place the sandwiches in the skillet and cook for 3 to 5 minutes on each side, until the bread is golden brown and the cheese is melted.
