What do you do when hunger strikes and you want a snack that isn’t full of salt and sugar? You whip up a batch of these delicious Zucchini Chips — healthy and ready in minutes, thanks to your Air Fryer.

It’s always a good idea to have something healthy to snack on in the house, whether for yourself or the whole family. When you get hunger pangs, you don’t always make the right decisions. Suddenly you convince yourself that potato chips are vegetables and carrot cake is healthy. These zucchini chips are the answer to that problem.

  • They are delicious with any dip.
  • We also sprinkled some over a salad and they were so yum!
  • Using an air fryer results in a crispy chip and cuts down on cooking time.
  • While we went with a simple salt ‘n’ pepper topping, you can get creative with your spice rack (rosemary and coriander are particular favorites!)

How do I cut thin chips without a mandolin?

You can use a cheese slicer, peeler, or a knife. Try to make them all the same thickness so they all cook at the same time.

How do I tell When the Zucchini Chips Are Done?

They will be slightly browned and crispy, but they get crispier as they dry. Just make sure they don’t go brown all over, then they will taste burnt. In my air fryer it took 7 minutes on 375°F. Yours may vary slightly, set it for lower times, open the drawer and have a look then put them back in.

Can you make Zucchini Chips without breadcrumbs?

Absolutely, we have done it here, they are thin and crispy like chips.

Is air fryer Zucchini Chips Low Carb?

Yes, they are a great keto snack, very low in carbohydrates.

Can I use Potato instead of Zucchini?

Yes, you can. In fact, I have a recipe for a great dip if you try.

Can I make this in the oven?

Yes, prep the zucchini according to this recipe. Line a baking sheet with parchment paper and arrange the chips in a single layer. Bake at 425°F for 15-20 minutes, flipping halfway through.

How To Store Air Fryer Zucchini Chips

Let the zucchini chips cool completely. Put them in an airtight container or resealable plastic bag then in the fridge where they will keep for up to 4 days. If you would like to freeze them, place the chips on a baking sheet in a single layer and freeze for an hour. Transfer the frozen chips to a freezer-safe container/bag. They should keep for up to 3 months. To reheat them, either cook in your air fryer at 350°F for 3-5 minutes or in an oven at the same temperature for 5-7 minutes.

Ingredients
  

  • 1/2 lb zucchini about 4 small zucchinis
  • 2 Tablespoons olive oil
  • 1 Tablespoon salt and pepper

Instructions
 

  • Wash your zucchini thoroughly and dry them so that you have a firm grip. Using a mandolin on the thin setting, slice them at an angle to get large chips

  • Place the zucchini chips in a bowl and mix with the olive oil, salt and pepper. Toss well to make sure that the chips are properly coated.

  • Lay the chips in a single layer on the bottom of your air fryer basket and fry at 350°F for 7-8 minutes. Remove the chips. Lay them on a plate to cool separately so they don’t steam and get soggy on top of each other.
