I’m a berry-head. Is that a thing, or did I just make it up? Either way, I love berries. All of them—blueberries, blackberries, raspberries. Berries are my favorite fruits, not just for snacking, but also for layering into my breakfast yogurt parfaits and mixing together in vibrant fruit salads.
What’s that, you say? I left strawberries off the list? Not at all! I was just saving the best for last. At least, the best in my book. Strawberries are my absolute favorite fruit. One of my favorite ways to enjoy these luscious berries now is in this strawberry sauce. Cooking them down with a little sugar and lemon juice transforms them into the most luxurious sauce—sweet and tart, with an intense strawberry flavor and a lovely consistency that’s both smooth and a bit chunky. There’s so much you can do with strawberry sauce, but I have to confess: once it cools, I always sneak a few spoonfuls straight from the pot.
All you need to make it are three simple ingredients and a little time. It couldn’t be easier, which means you can make it as often as you want. It’s also super fridge- and freezer-friendly, so consider making a double batch. You’ll be glad to have it ready whenever the craving strikes!

Strawberry Sauce
Ingredients
- 1 pound fresh strawberries
- 5 tablespoons granulated sugar
- 2 1/2 teaspoons lemon juice
Instructions
- Hull and slice the strawberries.
- In a medium saucepan, combine the sliced strawberries, sugar, and lemon juice.

- Place the saucepan over medium heat and bring to a gentle boil, stirring occasionally.

- Lower the heat and let it simmer for 15-20 minutes, stirring occasionally, until the strawberries soften and the sauce thickens.

- Take the sauce off the heat and allow it to cool. It will thicken more as it cools down.
