A keto-friendly spin on a classic dip that party-goers love.

I love Buffalo wings, but sometimes I want the flavor without the fuss of making the actual wings. Enter: Buffalo chicken dip. It balances cream cheese, ranch, hot sauce, and shredded chicken into one creamy concoction that comes together in about 20 minutes. On busy days, I’ve even used a rotisserie chicken from the grocery store, and it’s worked perfectly.

My family knows that if there’s a potluck or game night on the schedule, they can expect a crock of Buffalo chicken dip to make an appearance. I make this on the stovetop, but you could totally throw this in your slow cooker to set it and forget it, especially if you’re hosting. Without fail, it’s always one of the fastest things to disappear from the appetizer table.

I love to serve this dip with chips and crackers, but to keep things keto, you can also serve it with some crudités, pork rinds, cheese crisps, or low-carb tortillas for scooping.

How to modify your dip

The greatest thing about this recipe is that you can use the hot sauce of your choice. If you love a classic Buffalo flavor, Frank’s RedHot is always the way to go. For something milder, check out Frank’s Wing Sauce, or try adding some melted butter. For extra Buffalo flavor, you can marinate your shredded chicken in Buffalo sauce for 30 minutes to two hours before starting the recipe.

If you’re a spice fanatic, try adding a few pinches of ground cayenne pepper, or another of your favorite chiles. Just make sure that whatever you’re using adheres to keto, if that’s important to you.

How do I store leftovers?

Transfer leftover dip to an airtight container and refrigerate it for up to 4 days. Reheat it slowly in the oven or microwave until warm and smooth again.

Serving suggestions

I love this dip with hearty vegetables like carrot, celery, broccoli, and cauliflower, but you can also serve it with your favorite keto-friendly tortilla chips or crackers. To turn this recipe into a full dinner, you can make wraps with low-carb tortillas or lettuce.

Ingredients
  

  • 8 ounces cream cheese cut into pieces
  • 1 cup shredded mozzarella cheese
  • 1/3 cup hot sauce
  • 3 cups shredded chicken
  • 1/2 cup creamy ranch dressing
  • 2 tablespoons chopped green onions
  • 1/3 cup blue cheese crumbles

Instructions
 

  • In a medium saucepan over low heat, melt the cream cheese and mozzarella cheese together, stirring frequently to prevent sticking.

  • Stir in the ranch dressing and chopped green onions, and continue to heat the mixture until it is hot throughout.
  • Transfer the hot dip to a serving dish, or keep it warm in a small Crock-Pot if desired.
