These tender Buffalo Chicken Sliders combine sweet-and-spicy buffalo sauce with a creamy blue cheese spread—ready in under 30 minutes!

A while ago, I posted an easy and fast recipe for barbecue chicken sandwiches. It took no time to put together, and everyone in my house loved it. I thought about that sandwich for the rest of the day, wondering how I could take that recipe and make it into something else.

Then it came to me—a Buffalo chicken version. After all, my husband lives and breathes chicken wings. Obviously, he can’t eat greasy hot wings any time he wants. So, in order to appease his constant craving, I’ve made Buffalo chicken pizzas, chicken sandwiches, you name it, we have eaten it. But none of my Buffalo creations are as easy or as cute as these sliders.

I used the same technique as I did in the barbecue chicken sandwich recipe but changed the sauce. Plus, I made a creamy blue cheese spread—it’s a bit tangy with a pleasantly sharp bite that complements the spicy chicken. Add a simple side salad or serve it as part of your game-day spread. And since these sliders take less than 30 minutes to make, you can pull this recipe off any night of the week.

Balancing the heat

I like a little heat in my recipes. That said, I don’t want my tongue to go numb—you won’t find any ghost peppers here. Buffalo sauce can go from spicy to overpowering pretty fast, depending on your heat threshold. It’s one of the reasons I’ve added honey and vinegar to take the edge off the hot sauce. Honey softens the spiciness, while the vinegar brightens the sauce, so you can enjoy the heat without the fire.

How do I store leftovers?

Refrigerate the Buffalo chicken in an airtight container for up to 4 days. You can reheat the chicken gently in a saucepan over low heat or in the microwave. If the sauce looks thick, add a teaspoon or two of water to help loosen it.

For the blue cheese spread, refrigerate in a separate airtight container for up to 3 days. It usually thickens after a couple of days, so stir in a splash of milk or vinegar.

Serving suggestions

I like to lean into the whole Buffalo theme by serving the sliders with celery and carrot sticks. Just whip up some extra blue cheese spread or even a Homemade Ranch Dressing for dipping. A simple Green Salad is a great idea, too, and maybe a batch of Homemade Potato Chips or Sweet Potato Fries. And for the summer, you simply have to make Grilled Corn On The Cob!

Ingredients
  

For The Buffalo Chicken:

  • 3 tablespoons butter
  • 1/2 cup hot sauce
  • 4 tablespoons honey
  • 2 tablespoons white vinegar
  • 1/4 teaspoon pepper
  • 1/2 teaspoon salt
  • 12 slider buns
  • 1 rotisserie chicken shredded

For The Blue Cheese Spread:

  • 1/2 cup sour cream
  • 1/4 cup crumbled blue cheese
  • 1 tablespoon vinegar
  • 3 green onions chopped
  • Salt and pepper to taste

Instructions
 

To Make The Buffalo Chicken:

  • Melt the butter in a saucepan over medium heat.
    Cream simmering in a stainless steel saucepan on a stove top.
  • Add the hot sauce, honey, white vinegar, salt, and pepper. Bring to a gentle bubble, stirring often. The sauce should turn smooth and thicken slightly. This takes about 5 minutes.

  • While you are waiting for your sauce to come to a bubble, toast the buns.
  • Stir the shredded chicken into the thickened sauce and cook until heated through, about 2 minutes.

To Make The Blue Cheese Spread:

  • Put all the ingredients for the blue cheese spread in a medium bowl.
    Cream cheese, ground beef, and green onions in a mixing bowl for a savory dip or filling.
  • Stir until everything is well mixed, then check and adjust the seasoning.

To Assemble The Sliders:

  • Spread a layer of blue cheese spread on each toasted bun bottom. Spoon the Buffalo chicken on top.
    Cream cheese spread on toasted baguette slices, served as an appetizer.
  • Cap each slider with the bun tops and serve warm.
