This simple Garlic Bread Spread slathers well on everything from baguettes to ciabatta—serve with your favorite pasta!

I tend to overbuy bread. Don’t blame me. It’s not my fault that I happen to live within walking distance of three excellent bakeries. As a result, our freezer is often overstuffed with baguettes, sourdough, focaccia, and whatever else I couldn’t stop myself from grabbing. What’s a food hoarder to do? Make a garlic bread spread, obviously.

It’s a truly tasty way to clear freezer space, I can tell you that. However, I happily use this garlic spread on freshly baked loaves, especially for guests. Either way, this spread tastes just like what they serve at one of my favorite Italian American restaurants, which is also within walking distance (I got a problem). Any recipe that makes me want to drape the table in a red checkered cloth and pour a glass of Chianti is a win in my book. Or should I say cookbook?

My spread is buttery, garlicky, herbaceous, and doesn’t overdo the cheese. For a recipe as rich as this, a 1/4 cup of Parmesan is plenty. You want something that melts well, and too much cheese can mess with that. You should get a crisp, golden top. Best of all, garlic bread spread is as simple as can be to make. Soften the butter, stir in the ingredients, and you’re done!

Can I use salted butter?

When I’m grocery shopping, I tend to mix up the unsalted and salted butter. They look so dang similar. As such, I’ve had to make everything from cookies to cake with salted butter. So, can you use salted butter for garlic bread? Absolutely. But be mindful. Parmesan is naturally salty, and you don’t want your garlic and herbs drowned out in sodium. Lose the 1/8 teaspoon of salt, and you should be good to go!

How do I store leftovers?

Refrigerate in an airtight container and store for up to 5 days. It goes without saying that the spread will harden in the fridge. Give it a good 20 to 30 minutes to soften before using.

Serving suggestions

Use this spread on whatever bread you like. But if you’re feeling ambitious, bake your own. Italian Bread, Ciabatta, Sourdough—any of these will do! Serve your garlic bread alongside Italian American classics like Blackened Chicken Alfredo and Baked Mostaccioli. Oh, and let’s not forget about Spaghetti And Meatballs, my kids’ favorite!

Also, for a cozy, cold night in, a few slices of garlic bread make the perfect dipping companion for Butternut Squash Soup or an easy Beef And Potato Stew.

Ingredients
  

  • 1/2 cup unsalted butter softened
  • 1/4 cup grated Parmesan cheese
  • 3 cloves garlic minced
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano
  • 2 teaspoons chopped fresh parsley
  • 1/8 teaspoon salt

Instructions
 

  • Place the softened butter in a bowl. Stir in the grated Parmesan, minced garlic, dried basil, dried oregano, chopped parsley, and salt until the mixture is smooth and evenly blended.
  • Use your garlic bread spread by spreading the butter mixture onto halved baguettes or individual bread slices, then bake according to your preference.
