Want to know my secret weapon for an effortless weeknight meal? It’s this scrumptious Doritos chicken casserole recipe. Whether I’m stressed from a busy day at the office and can’t be bothered to make a big fuss about dinner or just want a simple meal to make on a cozy Sunday, casserole recipes like this one always seem to save the day. 

It might sound a bit odd to use an entire bag of Doritos in a casserole, but you’ve got to trust me on this one! The chips provide the casserole with an irresistible, crispy, crunchy texture that will definitely have you and everyone at your table going in for second helpings. The canned black beans and corn help bulk up the dish while adding a bit of protein and fiber. Meanwhile, the sour cream and shredded Mexican cheese take this dish to the next level. I personally love super cheesy casseroles that have a nice creamy texture. If you do too, then you’re going to love this recipe!

Can I make this recipe vegetarian? 

Yes! You can totally make this recipe vegetarian-friendly. All you have to do is replace the chicken with another can of black beans or some shredded and sautéed oyster mushrooms. You can also substitute the cream of chicken soup for cream of mushroom. When shopping, double-check that the cream of mushroom soup doesn’t have any traces of meat or meat-based broths. 

How do I store leftovers?

You can store any leftover casserole in an airtight container in the refrigerator for up to 3 days. To reheat it, I recommend putting it in an oven set to 375°F for around 10-15 minutes or until it’s heated through. Cover it with aluminum foil if it gets too crispy. Alternatively, you can reheat it in the microwave for 3-4 minutes on high until it’s warmed throughout. 

Serving suggestions

While this casserole is absolutely divine on its own, it’s even better when it’s served with a few side dishes. Ingredients
  

  • Cooking spray
  • 1 package nacho cheese-flavored tortilla chips (14 1/2 ounces) lightly crushed
  • 3 cups cooked chicken shredded or chopped
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 cups shredded Mexican blend cheese divided
  • 1 2/3 cups salsa
  • 1 can corn (15 ounces) drained
  • 1 can black beans (15 ounces) drained and rinsed
  • 1 can condensed cream of chicken soup (10 1/2 ounces)
  • 8 ounces sour cream
  • Fresh cilantro chopped (for garnish)

Instructions
 

  • Preheat your oven to 350°F. Lightly spray a 9×13-inch baking dish with cooking spray.
  • Spread the crushed tortilla chips evenly over the bottom of the dish.
  • In a large bowl, mix the chicken, paprika, garlic powder, onion powder, 1 cup of the shredded cheese, salsa, corn, black beans, cream of chicken soup, and sour cream until well blended.
  • Pour the chicken mixture over the chips in the dish. Bake for 25 minutes or until bubbly. Sprinkle the remaining 1 cup of cheese on top, then bake an extra 5 minutes to melt it.
  • Let the casserole rest for 5 minutes before serving. Garnish with cilantro and enjoy a warm, family-friendly meal!
