Not that there’s anything wrong with oats, but this recipe really works well without them!

It’s also great for kids. At least, I know my kids can’t get enough, and it’s a favorite when it gets dark earlier, the air is colder, and we crave warm desserts after dinner.

I find that with a lot of pastries and baked goods, you’re kneading dough, leaving it to rise, and attempting to carefully perform complex baking steps like a top chef. That can be worth it sometimes, but other times, I just want a good dessert that I can make easily. With this recipe, you mix, you bake, you’re done, and everyone enjoys a delicious apple crisp that beautifully captures the essence of fall.

What Are Baking Apples?
Simply put, a baking apple has a crisp, firm texture and won’t turn to mush when you bake it. When I make recipes that call for baking apples, I tend to use Granny Smith or Fuji apples. Some other good options are Honeycrisp, Jazz, and Pink Lady apples. Don’t choose varieties like Red Delicious, Gala, or McIntosh, as these will get too soft while baking, and you’ll end up with an apple mush instead of an apple crisp! Save these for eating or making applesauce.

How Do I Store Leftovers?
Transfer leftovers to an airtight container or cover the baking dish tightly with plastic wrap and store leftovers for up to 1 day at room temperature, or 3 days in the fridge. The crisp can be eaten warm or cold.
Can I Prep This Ahead?
Yes. Mix the apples as directed in Step 2 and place in the baking dish. Follow Steps 4 and 5 to make the crisp layer. Store both, tightly covered, until ready to bake the following day. Spread the topping over the apples, and bake as directed.

Serving Suggestions
The best thing to serve next to any warm apple dessert is, of course, Vanilla Ice Cream. But you can also try a Brown Sugar Ice Cream with a hint of caramel flavoring that’ll go well with your apple crisp. A Copycat Starbucks Pumpkin Cream Cold Brew is a nice drink to serve alongside, as the spices complement the cinnamon in the apples well.


Apple Crisp Recipe Without Oats
Ingredients
- 2.75 pounds baking apples peeled and sliced into 1/2-inch slices
- 2 teaspoons cornstarch
- 1/2 cup brown sugar
- 2 tablespoons lemon juice
- 2 pinches nutmeg
- 1 1/2 teaspoons ground cinnamon divided
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/4 teaspoon salt
- 3/4 cup unsalted butter room temperature, cubed
Instructions
- Preheat the oven to 375°F.
- In a large mixing bowl, toss the apple slices with cornstarch, brown sugar, lemon juice, nutmeg and 3/4 teaspoon of cinnamon until well coated.

- Spread the apple mixture in an even layer in an 8-inch square baking dish.

- In a separate medium mixing bowl, combine the flour, granulated sugar, 3/4 teaspoon of cinnamon, and the salt.

- Add the cubed butter to the flour mixture. Use a pastry blender or two forks to blend until the mixture forms small crumbles.
- Sprinkle the crumbly topping evenly over the apples in the baking dish.

- Bake in the preheated oven for 40-50 minutes, or until the topping is golden brown and the apples are tender.
