I absolutely love the simplicity of the ingredients in this recipe. But there are a number of different ways you can adjust this dish to personalize it to your own tastes. Are you a fan of smoky BBQ flavors? Try adding chili powder, garlic powder, and a pinch of brown sugar for a BBQ-inspired chickpea treat. For an Indian-inspired final product, you could add curry powder, turmeric, and even a sprinkle of cayenne pepper. For more of a Mediterranean vibe, I’d recommend tossing your chickpeas with oregano and lemon zest. Finally, you can also adapt this recipe to suit your sweet tooth. Just swap the paprika for cinnamon, add coconut sugar to taste, and roast until the sugar is caramelized. Looking to adjust the final texture of your roasted chickpeas? Ensuring that your chickpeas are fully dry before you add oil will give them an extra crunch. How do I store leftovers?

I definitely recommend getting through your roasted chickpeas as quickly as possible, as I find the texture is best on the same day they’re made. But with the right storage method, you can absolutely maintain their crispiness for later enjoyment. Simply place any leftovers into a container and do not seal it fully. A loose lid can help prevent moisture from seeping into the container and affecting the chickpea texture. You can store them at room temperature for up to 2 days. When you’re ready to enjoy your leftover chickpeas, you can absolutely serve them at room temperature. Or you can reheat them in an oven or air fryer until warmed through.

You can enjoy these roasted chickpeas on their own for a satisfying snack. But if you’re looking for some suggestions on creative serving ideas for this dish, I’ve got you covered! Ingredients
  

  • 2 cups cooked chickpeas
  • 2 tablespoons extra-virgin olive oil
  • Pinch sea salt
  • 1/2 teaspoon paprika powder
  • 1 tablespoon mint leaves

Instructions
 

  • Preheat the oven to 400°F and line a baking sheet with parchment paper.
  • Clean the chickpeas in cold water to remove any loose skins. Drain the chickpeas and transfer them on a kitchen towel to remove excess water.

  • Transfer the chickpeas to the prepared baking sheet, then toss them with the olive oil and half of the paprika powder. Season with a pinch of sea salt.
  • Bake the chickpeas for 20 minutes, or until golden brown.
