Preheat the oven to 400°F and line a baking sheet with parchment paper.
Clean the chickpeas in cold water to remove any loose skins. Drain the chickpeas and transfer them on a kitchen towel to remove excess water.
Transfer the chickpeas to the prepared baking sheet, then toss them with the olive oil and half of the paprika powder. Season with a pinch of sea salt.
Bake the chickpeas for 20 minutes, or until golden brown.
Remove the chickpeas from the oven and toss them with the remaining paprika powder and mint leaves.
