Greek flavor profiles are top-notch, which is why I crave Greek food more than anything else. The oregano, the salty feta, the red onions, the juicy tomatoes, and all that garlic…be still, my heart. Of all the great Greek culinary offerings, however, I find myself hungry for Greek salads the most.

Give me all the kalamata olives and the lemony zest on top of a big pile of romaine lettuce or mixed greens. Put a beautiful sliced chicken breast, hot off the grill, on top of it all. Then, drizzle on that perfect, garlicky, herbaceous oil-and-vinegar-based dressing. Is there anything more perfect than a Greek salad that hits all those notes?

Personally, I don’t think so, and that’s why I’m pulling out this recipe for my favorite homemade Greek salad dressing to share today. Lemon juice and red wine vinegar provide the acidity and flavor base, a touch of Dijon mustard lends more zing, fresh crushed garlic and dried oregano add a quintessential Greek-ness, and the flavor profile is fine-tuned with simple salt and pepper. If you’ve never made your own salad dressing, this is an excellent place to start. Trust me, you’ll want to put it on everything!

Flavorful variations of Greek salad dressing

Everyone’s tastes are different, which is why trying different variations of this Greek salad dressing will ensure you find the right balance of ingredients to suit your taste. Here are a few of my favorite takes on this salad dressing recipe.

  • Herby Greek salad dressing: You already have oregano in this recipe, but you can add some extra herbs for even more flavor. I recommend a little dried basil, dill, fennel, marjoram, or tarragon.
  • Citrusy Greek salad dressing: By either increasing the lemon juice or incorporating some lemon zest into it, you’ll have an even zingier dressing!
  • Sweet Greek salad dressing: Add a teaspoon of honey to this dressing to sweeten things up a little. Just be sure to give it a mix and a taste before adding more.

How do I store leftovers?

Leftover Greek salad dressing is best stored in an airtight container, like a glass jar, in the fridge for up to 2 weeks. When you’re ready to use it, pull it out of the fridge and let it sit for about 10 minutes, then give it a good shake prior to use.

Serving suggestions

There are a million salads this would taste great with, and it’s amazing on more than just salads, too! Ingredients
  

  • 1 clove garlic crushed
  • 1 teaspoon Dijon mustard
  • 1 teaspoon dried oregano
  • 1/2 lemon juiced
  • 3 tablespoons red wine vinegar
  • 1/4 cup olive oil
  • Salt and pepper

Instructions
 

  • Place all ingredients into a bowl or jar. 
    Golden honey mustard vinaigrette in a clear glass jar, ready for salad dressing or marinade.
  • Mix it well with a fork or a small whisk. If you make it in a jar, seal the jar with a lid and shake the ingredients well. Store in an airtight container in the fridge until you're ready to use it. Let it sit at room temperature for about 10 minutes before use.
