These delightful Funfetti Cake Pops are guaranteed to bring out the kid in you!

Several years ago, when I was hosting my sweet niece Sara’s birthday party, she asked to have cake pops. She was super into rainbows at the time, so funfetti cake pops seemed like the best bet. I priced out getting them made, and after inquiries to a few bakeries and even a local independent baker, I decided to save my money and make my own. I’m so glad I did; cake pops are easy to make! Sara loved the rainbow treats, which were festive and fun.

The term “funfetti” is simply a portmanteau of the words “fun” and “confetti.” As a cake flavor, it hit the shelves in a Pillsbury cake mix in 1989 and has been a staple ever since. The original mix was a white cake studded with rainbow-colored sprinkles, which upgraded the previously boring cake layer to something exciting and colorful. Funfetti can also be called birthday cake flavor, and it’s widely available in boxed cake mixes, ice cream flavors, and even coffee creamers.

Cake pops and funfetti are a natural match. You will love this recipe because it uses just a handful of simple ingredients. Even if you’ve never made cake pops before, you can do this! Funfetti cake pops are moist, flavorful, and so cute to serve at birthday parties, weddings or baby showers, or any gathering where you want to serve a whimsical, delicious sweet treat.

What are candy melts?

If you haven’t made a lot of candy or baked a lot, you may not be familiar with this ingredient. Candy melts are different than chocolate (or white chocolate, in this case) chips. Larger in size and more easily melted than chocolate chips (hence the name), candy melts can be found in the baking aisle in your supermarket or specialty stores, including Michaels. Because they contain no cocoa butter, they melt super easily and when hardened, produce a slightly shiny, good-looking coating on the cake pops.

How do I store leftovers?

Store leftover cake pops in an airtight container lined with a paper towel or parchment paper. Refrigerate them for up to 5 days. They can be served chilled or set out to come to room temperature before serving, if you desire. I have a basement refrigerator with plenty of room, so I like to use my cake carrier to store the cake pops in, which makes for easy transport as well.

Serving suggestions

To serve, get creative with your presentation. Line up the cake pops on a tiered serving tray or use a cardboard cake pop display form (available online or at any craft or baking store). Cake pops are adorable and tasty on their own, but if you want other sweet treats to go with them, consider complementary handheld items like Chocolate-Covered Marshmallows, Sugar Cookie Bars, and Oreo Balls. Your dessert tray or table will be full of color and fun, as well as irresistible goodies!

Ingredients
  

  • 1 box funfetti cake mix plus eggs, oil, and water, as directed in the package instructions
  • 1/3 cup vanilla frosting
  • 24 ounces white chocolate candy melts
  • 1 teaspoon vegetable oil
  • 32 lollipop sticks
  • 1/3 cup rainbow sprinkles

Instructions
 

  • Preheat the oven to 350°F. Grease a 9×13-inch pan. Mix funfetti cake mix, eggs, oil, and water as instructed by the package.

  • Pour the batter into the pan and bake it until a toothpick inserted in the center comes out clean, about 20 minutes. Allow the cake to cool completely, about 1 hour.

  • Use your hands to crumble the cooled cake in a large bowl. Gradually stir in the vanilla frosting until the mixture holds together.

  • Scoop about 1 tablespoon of the cake mixture and roll it into a ball about 1 inch in diameter. Place the balls on a tray and freeze for 30 minutes to firm up.
  • Melt the white chocolate candy melts and vegetable oil in a microwave-safe bowl using 30-second bursts and stirring between bursts until smooth.
  • Dip the tip of each lollipop stick into the melted chocolate and insert it halfway into a cake ball. Then, dunk each cake ball into the melted chocolate until fully coated.

  • Tap the cake pop to remove excess chocolate and sprinkle with rainbow sprinkles. Stand upright until the coating sets.
