If you haven’t made a lot of candy or baked a lot, you may not be familiar with this ingredient. Candy melts are different than chocolate (or white chocolate, in this case) chips. Larger in size and more easily melted than chocolate chips (hence the name), candy melts can be found in the baking aisle in your supermarket or specialty stores, including Michaels. Because they contain no cocoa butter, they melt super easily and when hardened, produce a slightly shiny, good-looking coating on the cake pops.

How do I store leftovers?
Store leftover cake pops in an airtight container lined with a paper towel or parchment paper. Refrigerate them for up to 5 days. They can be served chilled or set out to come to room temperature before serving, if you desire. I have a basement refrigerator with plenty of room, so I like to use my cake carrier to store the cake pops in, which makes for easy transport as well.

Funfetti Cake Pops
Ingredients
- 1 box funfetti cake mix plus eggs, oil, and water, as directed in the package instructions
- 1/3 cup vanilla frosting
- 24 ounces white chocolate candy melts
- 1 teaspoon vegetable oil
- 32 lollipop sticks
- 1/3 cup rainbow sprinkles
Instructions
- Preheat the oven to 350°F. Grease a 9×13-inch pan. Mix funfetti cake mix, eggs, oil, and water as instructed by the package.

- Pour the batter into the pan and bake it until a toothpick inserted in the center comes out clean, about 20 minutes. Allow the cake to cool completely, about 1 hour.

- Use your hands to crumble the cooled cake in a large bowl. Gradually stir in the vanilla frosting until the mixture holds together.

- Scoop about 1 tablespoon of the cake mixture and roll it into a ball about 1 inch in diameter. Place the balls on a tray and freeze for 30 minutes to firm up.
- Melt the white chocolate candy melts and vegetable oil in a microwave-safe bowl using 30-second bursts and stirring between bursts until smooth.
- Dip the tip of each lollipop stick into the melted chocolate and insert it halfway into a cake ball. Then, dunk each cake ball into the melted chocolate until fully coated.

- Tap the cake pop to remove excess chocolate and sprinkle with rainbow sprinkles. Stand upright until the coating sets.
