A simple potato side dish that will have the whole family reaching for more!

An air fryer is the newest, best, and most convenient way to cook up some diced potatoes! The skin and edges get a little crispy, and the seasoning will become a requirement in your food for many dinners to come. Garlic powder and paprika are like powdered gold, turning anything they touch into mouthwatering excellence.
Potatoes are an easy and affordable food that goes a long way and has so much versatility. We eat them baked, mashed, diced, boiled, and even popped into a stew. They’re a great source of vitamins, minerals, and fiber that are easy to grow. As such, they’ve become a staple part of cuisines across the world. More than a staple, they’re a comfort food that makes you feel good and think of home when you eat them.
Potatoes are a particularly good side dish for those of us who avoid pasta, bread, and other starches that typically contain gluten. Providing a big bowl of diced potatoes allows everyone to take a portion they like, rather than serving halved baked potatoes or even potato skins where the quantity is a set amount.

Superb Seasoning
While your potatoes are, of course, very important, do not hold back on the seasoning! In fact, I often will double the amount of spices for something like this to really make sure I get a strong, delicious flavor cooked into my potatoes. Since potatoes alone are a bit of a bland food, your seasoning is what will carry this dish. For a little extra flavor, add an equal amount of onion powder as garlic powder to the recipe! You can also jazz it up with a dash of cayenne for a kick or some thyme or parsley for flavor. Additionally, though it’s not a spice, I’d recommend a sprinkling of parmesan cheese!

FAQs & Tips
How to Make Ahead and Store?
These air-fryer diced potatoes should be allowed to cool to room temperature before you store them. Once cooled, you can put them in your refrigerator, where they will last for around 5 days. When you’re ready to eat them, you can get them crispy again in your air fryer for 3-5 minutes at 400F. You can use the microwave if you want to, but the potatoes won’t stay as crispy.
Shake it up!
Getting good results from your air frying requires a few things. Do your best to cut the diced pieces into equal sizes so that they cook evenly and you don’t end up with some undercooked, some perfect, and some overcooked. Giving your air fryer basket a good shake and toss halfway through the cooking process will also help you get an even cook on all the potatoes. This prevents the ones on the bottom from being undercooked. To make sure those bottom potatoes don’t stick when you give them a shake, spray the air fryer basket with cooking oil before cooking your potatoes.
Starch-Be-Gone
If you want to keep your potatoes crispy on the outside and soft on the inside, try soaking the cut potatoes in cold water before you cook (10 minutes should be plenty). After they’re done soaking, drain and dry them thoroughly. This helps get rid of any excess starch while also getting them ready to fry.

Serving Suggestions
Whenever I make these, they’re almost always accompanying a meat main dish and a vegetable side dish. For example, a One-Pan Roasted Chicken and Vegetables dish would work as a good main meal with your diced potatoes! Placing a Spatchcock Chicken as a centerpiece to offer your family alongside your potatoes will look beautiful, especially accompanied by some bright greens like in this Easy Sauteed Broccoli Recipe. Or, if you’d rather have some red meat, set out next to a top-notch Pan-Seared Steak for a classic meat-and-potatoes combination, which is truly divine.
