Creamy, cheesy, comforting, and simple to prepare, you’ll be making Crack Chicken Casserole on repeat!

Every time I make a beloved comfort food, like meatloaf, lasagna, or homemade chicken noodle soup, I think, “This is my favorite comfort food.” And while I mean no disrespect to those tried and true dishes, all of which I do love, there’s a new favorite comfort food in town, and it’s Crack Chicken Casserole. Every single bite is rich and savory and so luxuriously creamy, and it just makes you feel so happy when you’re eating it. Crack Chicken Casserole is, now and possibly forever, what I consider the ultimate comfort food.

It’s all in the name, and it’s not called Crack Chicken Casserole for nothing: it is completely addictive. The tender chicken bathed in that thick and velvety, wonderfully seasoned, and cheesy sauce is the kind of thing you just can’t stop eating. Some people say that foods named “crack” have a combination of cheddar, bacon, and ranch in the recipe—like this one—but that’s not always true. Back in 2008, well-known pastry chef Christina Tosi named what then became her signature dessert “Crack Pie” because her staff, who she concocted it for, could not stop eating it. And lots of people call chipotle sauce Crack Sauce (because they cannot stop eating it!).

Rich and indulgent (made more so by the fact that there’s also bacon in here!), Crack Chicken Casserole gets a punch of flavor from the ranch seasoning mix (ranch being yet another irresistible taste). And that flavor permeates the sauce made from sour cream, cream of chicken soup, and sharp and tangy cheddar cheese. And then there’s the topping, this crispy deliciousness made from crushed crackers mixed with melted butter. You’re also going to love how quickly this dish comes together: all the main ingredients are combined in one bowl (easy clean up!), and then into the baking dish it goes. Then, you just prepare the quick topping, spoon it on top, and it’s ready for the oven. 30-40 minutes later, and it’s ready for you to devour.

Crack Chicken Casserole needs, of course, chicken! You can get a rotisserie chicken at the store, or you can make your own Rotisserie Chicken. If you want to add even more flavor to this dish (if you dare!), cook and chop up these Herb-Baked Chicken Breasts

How to Lighten Up Crack Chicken Casserole

Admittedly, Crack Chicken Casserole is a really rich, decadent dish that may not be the healthiest thing we can eat. But thank goodness we live in a day and age when we can lighten up almost any dish we make because so many ingredients come in lower-fat, lower-calorie versions.

Let’s start with the shredded cheddar cheese, which comes in reduced-fat varieties. Lots of companies also make plant-based cheddar shreds, which taste and melt just like the real thing. Next on our ingredient list is bacon. While some people claim they do not like the taste or the texture of turkey bacon, if you’re not one of those people, you can use it here instead of pork bacon to reduce some calories and fat. Onto sour cream! Using light sour cream will work beautifully in this recipe, but word to the wise: don’t choose the non-fat version because it is different in taste, as well as texture. And while it may make you wary to swap the regular cream of chicken soup with the low-fat version because the soup supplies so much of the casserole’s rich texture, don’t fret: the 98% fat-free variety works perfectly in this recipe. Finally, you can make this dish much lower in carbs by substituting grated Parmesan for the crushed crackers as your topping; if you want the cracker topping but not necessarily the butter, toss them in heart-healthy olive oil instead, and they will come out just as crunchy.

How to Make Ahead and Store?

You can prepare Crack Chicken Casserole through Step 4, cover it tightly, and store it in the refrigerator for up to 3 days or in the freezer for up to 3 months before Step 5 (thaw frozen casserole overnight in the fridge before baking). The cooked casserole can be stored in an airtight container in the refrigerator for 3-4 days and in the freezer for up to 6 months. However, after a few months in the freezer, the quality of the casserole begins to decline, so the sooner you eat it, the better!

Serving Suggestions

When you serve Crack Chicken Casserole as an entree for dinner, you’ll find there are so many great side dishes to go along with it. I always think it begs for something green, so I love to serve this casserole with either Roasted Brussels Sprouts or Sauteed Broccoli. And then, because the casserole doesn’t contain a starch, some Baked Rice or these Crispy Smashed Potatoes.

Call me crazy, but Crack Chicken Casserole doesn’t have to only be an entree. We’ve had it as a hot dip with Air Fryer Zucchini Chips and some dippable cooked vegetables, like Grilled Asparagus and Chardonnay Roasted Carrots. It also makes an amazing topping when you’re doing a Baked Potato Bar. And what about this? Whip up some Buttermilk Biscuits, split them open, and spoon the Crack Chicken Casserole inside (you’ll love how that sauce sinks into the fluffy biscuits).

Ingredients
  

  • 4 cups cooked chopped chicken
  • 1 oz ranch seasoning mix
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup cooked chopped bacon
  • 1 1/2 cups sour cream
  • 10.5 oz can of cream of chicken soup
  • 1 1/2 cups crushed plain crackers
  • 1/4 cup unsalted butter melted

Instructions
 

  • Preheat your oven to 350°F. Prepare a 9×9-inch baking dish by lightly coating it with cooking spray.
  • In a large mixing bowl, combine the chopped chicken, ranch seasoning mix, shredded cheddar cheese, chopped bacon, sour cream, and cream of chicken soup. Stir until all ingredients are well mixed.

  • Transfer the chicken mixture to the prepared baking dish, spreading it out evenly.

  • In a small bowl, mix together the crushed crackers and melted butter until the crackers are evenly moistened. Sprinkle this mixture over the top of the chicken layer in the baking dish.

  • Place the baking dish in the preheated oven and bake uncovered for 30 to 40 minutes, or until the casserole is bubbly and the topping is golden brown.
