1poundboneless, skinless chicken breastscut into 1-inch pieces
Salt and pepper to taste
1red bell pepperdiced
1cuppineapple chunks
1tablespooncornstarch
Cooked white rice for serving
Instructions
In a small bowl, mix together soy sauce, brown sugar, garlic, ginger, and red pepper flakes, if using. Set aside.
Heat olive oil in a large skillet over medium heat. Season chicken pieces with salt and pepper, then add to the skillet. Cook until golden and no longer pink, about 5-7 minutes.
Add diced red bell pepper and pineapple chunks to the skillet. Cook for 3-4 minutes, until the peppers are slightly softened.
Pour the soy sauce mixture over the chicken and vegetables. Stir to combine.
Dissolve cornstarch in 2 tablespoons of water and add to the skillet. Stir well and allow the sauce to thicken for about 2 minutes.
Serve the Hawaiian chicken hot over cooked white rice.
