How To Make Ahead And Store

This dish can absolutely be made ahead of time, and in fact it is almost better if you do, as it allows for the flavors to meld beautifully. Once cooked and cooled, Hawaiian chicken will last up to 4 days in the refrigerator when stored in airtight containers. It can also be frozen in a freezer-safe container for up to 3 months.

Can I Use Canned Pineapple?

For this dish, fresh is best. If you do use canned, however, opt for chunks that have been preserved in 100% pineapple juice, not syrup, and drain thoroughly. Save the juice for use in a smoothie.

Serving Suggestions

Ingredients
  

  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 clove garlic minced
  • 1 teaspoon ginger grated
  • 1/4 teaspoon red pepper flakes optional
  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts cut into 1-inch pieces
  • Salt and pepper to taste
  • 1 red bell pepper diced
  • 1 cup pineapple chunks
  • 1 tablespoon cornstarch
  • Cooked white rice for serving

Instructions
 

  • In a small bowl, mix together soy sauce, brown sugar, garlic, ginger, and red pepper flakes, if using. Set aside.

  • Heat olive oil in a large skillet over medium heat. Season chicken pieces with salt and pepper, then add to the skillet. Cook until golden and no longer pink, about 5-7 minutes.
  • Add diced red bell pepper and pineapple chunks to the skillet. Cook for 3-4 minutes, until the peppers are slightly softened.

  • Pour the soy sauce mixture over the chicken and vegetables. Stir to combine.

  • Dissolve cornstarch in 2 tablespoons of water and add to the skillet. Stir well and allow the sauce to thicken for about 2 minutes.
