Preheat the oven to 350°F.
Arrange the biscuits evenly in the bottom of a greased 9x13-inch baking dish.
In a skillet over medium-high heat, cook and crumble the pork sausage until fully browned. Drain excess grease, then layer sausage over the biscuit base.
Sprinkle 1 cup of shredded cheddar cheese evenly over the sausage layer.
Whisk together eggs, milk, salt, and pepper. Pour mixture evenly over the cheese layer.
In a saucepan, combine water and gravy mix. Bring to a boil, then reduce heat and simmer until thickened, about 2 minutes. If necessary, add more water to reach desired consistency. Pour gravy over the egg layer.
Bake in the preheated oven for about 30 minutes, or until the eggs are set and the cheese is bubbling.
Sprinkle the remaining 1/2 cup of cheese on top and bake for an additional 10 minutes, or until cheese is melted and golden.
