Toss the potato wedges in a large bowl with the olive oil, smoked paprika, dried parsley, garlic powder, sea salt, and black pepper until they are evenly coated.
Arrange half of the potato wedges in the air fryer basket. Having good air circulation is crucial in an air fryer; make sure they are not overlapping.
Cook for 10 minutes, then use tongs to flip the wedges. Continue cooking for an additional 5 minutes.
Remove the cooked potato wedges from the air fryer, keep them warm, and repeat the process with the remaining potato wedges.
Serve the wedges hot.
