Anytime we have grilled steak or burgers, my family demands potatoes of some sort. Baked potatoes are great, but there’s just something about a meaty, hearty potato wedge that you can dip into ketchup (or barbecue sauce, if you’re my husband, but he’s always got to be a little different!). Too often, however, from-scratch potato wedges are ho-hum and not very crispy.

So what’s the remedy for sad potato wedges? For starters, get out your air fryer. The air fryer, with its method of circulating the hot air around each potato wedge, is the best way to get crispy-on-the-outside and pillowy-soft-on-the-inside wedges. Bonus: It’s super easy!

You will love air-fryer potato wedges because they’re a simple recipe, and the seasoning mix makes them irresistible. The combo of smoked paprika, dried parsley, garlic powder, salt, and pepper is nothing fancy, but it takes the flavor up a level. Finally, when you use your air fryer, the cleanup is a breeze!

Smoked paprika vs. paprika

Is there a difference between smoked paprika and regular paprika, and does it make a difference in potato wedges? Yes and yes. The main difference is how the paprika is made. As its name implies, smoked paprika is made with peppers that have been smoked beforehand, while regular paprika is not. What the smoked paprika does for the potato wedges is impart a slightly smoky, earthy zing to the spice blend. It helps impart a grilled flavor to the potato wedges, which pairs especially nicely with grilled steaks or hamburgers.

How do I store leftovers?

If you want to make air-fryer potato wedges ahead of time, you can let the cooked wedges cool completely, place them in an airtight container, and store them in the refrigerator for up to 3 days. Alternatively, you can freeze them for up to 3 months. When you’re ready to reheat them, just preheat your air fryer to 375°F, recrisp them for about 5 minutes, and serve. Leftovers can be stored and reheated the same way.

Serving suggestions

On a summer evening, we love this Grilled Flank Steak With Garlic Butter Sauce and some air-fryer potato wedges—a delicious meal where we don’t have to heat up the oven! Add in a simple Wedge Salad, and it’s a perfect meal to be enjoyed on the deck. However, air-fryer potato wedges are tasty alongside a lot of other mains besides grilled steak. Try them along with some Vegetarian Feta Burgers With Tzatziki Sauce or Roast Pork Sandwiches.

Ingredients
  

  • 2 medium russet potatoes
  • 1 1/2 tablespoons olive oil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions
 

  • Preheat your air fryer to 400°F.
  • Cut the potatoes into wedges (slice each potato in half lengthwise, then cut each half into four equal wedges). You should end up with 16 wedges in total. Also, make sure to cut the potatoes into uniform sizes; it is key to even cooking.
  • Toss the potato wedges in a large bowl with the olive oil, smoked paprika, dried parsley, garlic powder, sea salt, and black pepper until they are evenly coated.
  • Arrange half of the potato wedges in the air fryer basket. Having good air circulation is crucial in an air fryer; make sure they are not overlapping.
  • Cook for 10 minutes, then use tongs to flip the wedges. Continue cooking for an additional 5 minutes.
  • Remove the cooked potato wedges from the air fryer, keep them warm, and repeat the process with the remaining potato wedges.
  • Serve the wedges hot.
