Give your dinner staple an easy upgrade with veggies tucked inside and a marinara glaze that’s sure to please any crowd!

Baked cheese and spinach stuffed chicken breast with marinara sauce in a pink baking dish.

I ate a lot of meatloaf when I was a kid. I’m sure it was a way to stretch our working-class food budget to feed our family of seven—but it was also a meal I truly loved. At Easter, Mom would tuck peeled hard-boiled eggs inside so that each slice featured a sunny yolk in the middle. And leftovers made the best sack-lunch sandwiches!

This turkey meatloaf recipe puts a lighter, gourmet-leaning twist on this classic dinnertime staple. Subbing in ground turkey for ground beef lowers the calorie and fat content a bit, and tucking a few veggies inside elevates not just the nutrition but also the flavors and textures of the dish.

My mom always cooked hers in a loaf pan, which produced nice, uniform slices and the classic meatloaf shape. But the freeform method of this recipe unlocks a whole new dimension of texture. Shaping the meat mixture into a log and then baking it in a wider dish allows flavorful juices to escape, so the outer layer caramelizes and crisps up beautifully, especially with a glaze. It also bakes more evenly, reducing soggy bottoms and ensuring the cheese and veggie fillings stay in the center.

With each moist, flavorful bite, your family will be happy you tried this method!

Make this meatloaf your own

This turkey meatloaf recipe is your blank canvas for trying bold flavors and inventive fillings. Mix up the cheese and veggies inside to suit your preferences, then add a topping that takes it to the next level. Even simply using a homemade Marinara Sauce Recipe instead of a store-bought jar can elevate the dish.

For a Mediterranean-inspired version, swap the mozzarella and spinach for crumbled feta and sun-dried tomatoes with a swirl of this Homemade Basil Pesto Recipe on top instead of marinara.

If you’re going for old-fashioned comfort-food charm, opt for classic cheddar and bacon inside and a tangy ketchup-mustard blend on top.

For a lighter twist, pack in fresh herbs and sautéed veggies, like basil with onions, chopped peppers, and shredded carrots. Then glaze with this bright and bold Romesco Sauce Recipe.

How do I store leftovers?

Let your turkey meatloaf cool before storing it, but don’t leave it at room temp longer than 2 hours. Store leftovers in an airtight container in the fridge for up to 3 days. You can also freeze leftover meatloaf for up to 2 months in freezer-safe containers or bags. Thaw overnight in the fridge. Reheat individual slices in the microwave for 1–2 minutes or in a 350°F oven for about 10 minutes until heated through.

To prep this dish ahead, follow steps 1 through 5 to assemble the meatloaf, tightly cover it with plastic wrap, and refrigerate for up to 24 hours. Bake directly from the fridge, adding an extra 5-10 minutes to the recipe times and checking the internal temp with a meat thermometer.

Serving suggestions

Serve your turkey meatloaf alongside veggie-rich dishes that deliver a balanced dining experience. A classic choice is a Green Salad, but a Mediterranean Salad With Pomegranate Lemon Dressing takes the meal up a notch, and a Winter Salad brings in a variety of flavors and textures. For a heartier pairing the kids will love, consider Crock-Pot Mac And Cheese.

Ingredients

  • 1 tablespoon olive oil
  • 1 clove garlic chopped
  • 1 cup white mushrooms chopped
  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1 large egg
  • 1/2 cup mozzarella shredded
  • Handful fresh spinach
  • 1/2 cup marinara sauce plus more for serving, if desired

Instructions

  • Preheat the oven to 375°F. Prepare a deep baking dish with a light coating of butter, olive oil, or nonstick cooking spray. Set aside.
  • In a small skillet, heat the olive oil over medium-high. Add the chopped garlic and mushrooms and cook, stirring occasionally, until the mushrooms release their moisture and turn golden brown, about 8-10 minutes. Remove from heat and let cool for 5 minutes.

  • In a large mixing bowl, combine the ground turkey, cooled mushroom mixture, breadcrumbs, and egg. Mix gently with your hands or a spatula until evenly combined—avoid overmixing to keep the meatloaf tender.

  • Lay a sheet of parchment paper or plastic wrap on a flat surface. Transfer the turkey mixture onto it and pat it into a 1/2-inch-thick rectangle, roughly 8×10 inches in size.

  • Sprinkle the mozzarella evenly over the meat mixture and layer the spinach leaves on top. Starting from one short end, carefully roll the meat mixture into a log, using the parchment to help shape it as you go. Pinch the seam and ends to seal. Transfer the rolled loaf seam-side down into the prepared baking dish.

  • Bake uncovered for 35 to 45 minutes, or until the internal temperature reaches 160°F. The exterior should look slightly golden, and you may notice some bubbling juices along the edges.
  • Remove from the oven and brush the top evenly with marinara sauce. Return to the oven and bake for another 10 minutes, until the sauce is heated and the loaf reaches 165°F.

  • Remove from the oven and allow the meatloaf to rest in the baking dish for about 5–10 minutes before slicing to allow the juices to redistribute.

This looks like a great recipe! Please check your ingredient list, though. The last five ingredients show up as doubled.
