These little orange and white chocolate chip muffins are like little muffins of sunshine. When you bake with white chocolate chips, they almost get caramelized. I love how the flavor changes.

It is dark and stormy outside. Lots of thunder and lightning. It is the perfect day to stay inside in your jammies and watch movies. I am fairly incapable of concentrating on anything else because I am watching Season 2 of Downton Abbey on my iPad. I am so into this show, I love everything about it. Of course, the fact that it is British doesn’t hurt. The costumes are perfect, the characters strong, and I love the grandmother. The stuff that comes out of her mouth is nothing short of amazing. I am suddenly craving afternoon tea served on my china with a scone of some sort. Or maybe a muffin. Like an orange and white chocolate one.

I don’t know why I do not make muffins more often. They are so easy. You measure out a few ingredients, mix wet into dry, and 20 minutes later, you have a delectable muffin to eat for breakfast or snack. The secret to a good muffin is to not overwork the batter. Mix the batter until everything is just combined. It is okay to be lumpy, it guarantees a tender muffin. These little orange and white chocolate chip muffins are like little muffins of sunshine. When you bake with white chocolate chips, they almost get caramelized. I love how the flavor changes.

Orange and White Chocolate Muffins Ingredients

  • 1 2/3 cups flour
  • 1/3 cup cornmeal
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 cup sugar
  • 6 Tablespoons vegetable oil
  • 1 egg
  • 3/4 cup milk
  • 1 orange (zest and juice)
  • 1 cup white chocolate chips

How to Make – The Steps

Step 1: In a large bowl, whisk together flour, cornmeal, baking soda, baking powder, and sugar.

Step 2: In a measuring cup, mix together oil, egg, milk, the zest from the orange, and the juice of that orange.

Step 3: Pour the wet ingredients into the dry ingredients. Mix until it just comes together. It will be lumpy and that is okay.

Step 4: Stir in 3/4 cup white chocolate chips.

Step 5: Line a muffin tin with paper liners. Divide the batter into cups. Sprinkle the tops with the remaining chocolate chips.

Step 6: Bake in a preheated 400-degree oven for 20 minutes. Cool on a rack.
