Say hello to your new favorite potato dish.

Potatoes have been a staple in cooking since the beginning, in fact they date back as far as 8000 BC where they were first cultivated by the ancient Inca Indians of Peru. Since then, there have been more recipes created around this tuber, more than you have time to count. Today though, we are keeping it simple and this New Potato recipe is as simple as it gets and takes very little time, which I know we can all use a little more of that these days.

Saving time might be great, but not having to clean a bunch of pots is even better. That makes this new potato recipe perfect, since it is a one pot dish. Simple, quick and easy. That sounds like the perfect side dish to any meal if you ask me, one that is sure to satisfy the potato lover in all of us.

What is a new potato?

New potatoes are harvested early on in the growing season and are usually only available in the spring time. Since these tiny treats are selected before they are fully ripe they end up being slightly sweet, and cook up to become silky smooth and tender texture. The skins on these new potatoes are delicate and thin so there is no need to peel them, just give a quick rinse to remove any dirt and you are ready to cook. In the event you can’t find any new potatoes at the store, I recommend looking at your local farmers market. You can also use baby potatoes, they just need to be cooked a touch longer.

Ingredients

  • 2 pounds baby potatoes uniform in size
  • 1 tablespoon salt for boiling water
  • 2 tablespoons unsalted butter
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons fresh dill finely chopped
  • 1 tablespoon fresh chives finely chopped
  • 1 tablespoon fresh parsley finely chopped

How to Make New Potato

Step 1: In a large pot, cover the baby potatoes with cold water and stir in 1 tablespoon of salt. Bring the water to a boil over high heat, then reduce to a medium simmer to prevent the skins from splitting. Boil for 10 to 15 minutes until a knife slides in without resistance.

Step 2: After boiling, drain the potatoes and let them sit for a minute to steam dry. This helps the butter to coat the potatoes evenly.

Step 3: Transfer the potatoes to a bowl. Sprinkle with the additional salt and pepper, then add the butter. Toss everything together until the butter is melted and the potatoes are well coated.

Step 4: Just before serving, sprinkle the chopped dill, chives, and parsley over the potatoes. Stir gently and serve the potatoes warm.

FAQs & Tips

How to Make Ahead and Store?

To make this dish ahead of time, cook the potatoes as directed but instead of coating them with the butter and seasonings place the potatoes on a wire rack to cool, then store them in an air tight container in the fridge for up to five days. To use the potatoes just reheat them in the oven and dress with the butter and seasoning mix once hot.

Are fingerling potatoes the same as new potatoes?

No, new potatoes are harvested early and usually only available at farmers markets in the spring time. You can however use fingerling potatoes, they just take a little longer to cook.

Can I make this dairy free?

Absolutely yes! Replace the butter with a nice extra virgin olive oil and you have a delicious dairy free alternative.

What else can I do with my leftovers?

These cooked new potatoes are excellent cut up and fried with breakfast, or smashed and made into a super creamy mash potato dish. You can also smash them add a little butter and seasoning then roast them in the oven for an excellent roasted potato.

Serving Suggestions

This new potato recipe is a wonderful side dish to just about any meal you can think of.
They pair deliciously with seared steak, or baked chicken, and they complement roast fish perfectly. The waxiness of these tiny potatoes means they can be tossed into a myriad dishes and hold up without falling apart. Potato salads, soups, stews, and curries present amazing opportunities to display the delicate taste of these potatoes.
