A keto diet–friendly alternative to classic whipped cream!

I always want to be a good host and a good friend. The way I grew up, you showed love and hospitality towards guests by providing them food. There’s something really wonderful in seeing the delight in a person’s eyes when you serve them something they really love and appreciate—especially when they’re on restrictive diets and they don’t get that effort from many others. I’ve never been on a keto diet; however, I do have a friend who is. Whenever she visits I want to be able to provide her with food she can actually eat! It can be a challenge, I’m not going to lie. The keto diet restricts sugar and carbohydrates, so you can’t use sugar to create a keto-friendly whipped cream. Luckily, that doesn’t mean that flavor is forbidden! Vanilla extract is a great way to remind keto-accustomed taste buds of sweet things, and a little bit of keto-friendly sweetener goes a long way to complement that vanilla!
This recipe is great because it provides that sweet, fun treat of whipped cream while staying in line with the dietary restrictions of a keto diet or any diet in which carbs and sugar are verboten. It’s an easy thing to make, comes out light and fluffy, and only takes a few minutes from start to finish!

Sweetening the Cream
Erythritol is a sugar alcohol that’s produced from corn. It is used as a sugar replacement with few calories. It is considered about 70% as sweet as real sugar so keep that in mind when incorporating it into your recipes. It’s a good idea to use a powdered version of this sweetener, as it will dissolve faster and easier than a granulated version, and not leave your whipped cream with a rough texture.

How Do I Prep and Store this Whipped Cream?
You can keep your keto whipped cream in an airtight container in the fridge for around 3 days. If you want to store your whipped cream longer, you can freeze dollops of it on a parchment-lined baking tray and then transfer the dollops to a freezer-safe container. Frozen this way, the whipped cream will last for about 3 months. Allow to thaw at room temperature and do not microwave to speed up the process, as you will melt the whipped cream into a messy puddle.
Use High-Fat Cream
For a true keto recipe, you need to use high-fat cream—the version with the highest fat content available. Do not go for a half-and-half option or for a ‘light’ cream. Do note that if you whip your high-fat cream too much, you may end up with butter, so stop once you get the right consistency!

Keto Whipped Cream Recipe
Ingredients Â
- 1 cup heavy cream
- 2 teaspoons powdered erythritol or another keto-friendly sweetener
- 1/2 teaspoon pure vanilla extract
InstructionsÂ
- In a medium bowl, chill the heavy cream until very cold.

- Using an electric mixer, beat the chilled cream on medium-high speed until it begins to thicken and soft peaks form.

- Reduce the speed to low and gradually add the powdered sweetener and vanilla extract to the cream.

- Increase the speed back to medium-high and continue to beat until the mixture is smooth and has reached a fluffy consistency, being careful not to overbeat as it can become buttery.
