Your favorite breakfast staples, all in a single-dish casserole that’s so easy to make you might just get the chance to sleep in!

Creamy homemade casserole with cheese, bacon, and vegetables on a rustic plate.

Casseroles took center stage in the American cuisine of the mid-20th century, starting as an elegant one-dish wonder to serve as both centerpiece and scrumptious entrée before devolving into the more casual meal we’re familiar with now. Casseroles (being just about any combination of food cooked together in an earthenware dish) are so flexible that you can use them to make wholly inclusive meals for any meal of the day – including breakfast!

That’s what we’re setting out to do with our hash brown breakfast casserole! Scrumptious sausage, a delicious dairy combo of whole milk and cheddar cheese, and a flavorful vegetable medley of bell peppers, onions, and beautifully browned potato hash come together to give you a breakfast platter all in a single dish! With a little bit of everything you’d want for breakfast, you can start the day off right (and with ease!)

FAQs & Tips

How to Make Ahead and Store?

Because this Hash Brown Breakfast Casserole can take so long to make, it might be advantageous to make it the night before! Once finished, you can store your cooled casserole in its original baking dish (covered) in the fridge and reheat a slice at a time in the microwave!

What Can I Add To My Hash Brown Breakfast Casserole?

Because our Hash Brown Breakfast Casserole has everything you could ever want from a breakfast plate inside it, you can add just about anything to it! Your favorite omelet ingredients fit perfectly into this casserole, along with other breakfast favorites like bacon!

I Can’t Get My Casserole To Set, What Do I Do?

You may have excess moisture in your casserole. Moisture can prevent this casserole from attaining that essential structure that makes it easy to serve out of the dish – but a too-dry casserole can be unpalatable. The secret is to remove the excess moisture from as many of the ingredients as you can like pressing your vegetables and ensuring that there’s minimal ice on your frozen hash browns before baking!
