Ring in the holiday spirit by making these adorable Christmas Cake Pops!

Oh, the holidays! It’s probably one of my favorite times of the year. Typically, I’ll fly back to my hometown of Los Angeles to spend time with my family and friends, but this time I’m hosting in Italy. So, I’m gearing up and trying to find decorations and, most importantly, recipes that I can make while my family is staying with me. I’ve been looking to switch things up from our typical Christmas cookie bake-off to something a bit easier since I’m going to be hosting and cooking for around 10 people, and these Christmas cake pops are the perfect solution.

I love how this recipe uses a box cake mix, so I don’t have to stress about buying multiple ingredients and whipping together a homemade batter. Plus, with fewer ingredients, you can save money for buying more presents. The cream cheese frosting wraps the whole dessert together in a perfect bow, adding a lovely creamy texture and tangy flavor. Feel free to switch it up and add whichever store-bought frosting you prefer.

These cake pops are tasty, easy to make, absolutely adorable, and perfect for any holiday occasion, whether you’re looking for an after-dinner dessert or just want to bring some holiday cheer into your sweet treats.

How can I get perfectly uniform cake pops?

If you want your cake pops to be perfectly round and plump, I recommend investing in a cookie scoop. A cookie scoop will help you portion equal amounts of cake, so each ball is uniform in size. This will not only make it easier to dip, but it will also make your cake pops look more professionally made, too! 

How do I store leftovers?

You can store any leftovers in an airtight container in the refrigerator for up to 5 days. You can also freeze them for up to 2 months. To prevent sticking, you can layer them between sheets of parchment paper. To defrost, I recommend leaving them in the refrigerator for about 2-3 hours or until they’re fully thawed. 

Serving suggestions

I love making these Christmas cake pops on the days leading up to the holidays. Anytime I make a batch, I’ll serve it with either this Rich And Creamy Hot Chocolate or this Steamed Hot Chocolate. You can garnish each hot chocolate with one of these adorable Snowman Marshmallow Hot Chocolate Toppers, too! You can serve these cake pops for dessert after a tasty dinner or as a midday snack.

Ingredients
  

  • 1 box moist yellow cake mix (16 1/2 ounces)
  • Water, vegetable oil, and eggs as called for on the cake mix box
  • 5 tablespoons cream cheese frosting plus more, to taste
  • 8 ounces white candy melts
  • 8 ounces red candy melts
  • 8 ounces green candy melts
  • Vegetable oil as needed for melting chocolate
  • Festive sprinkles for decorating
  • Lollipop sticks

Instructions
 

  • Preheat oven to 350°F. Prepare cake mix per box instructions in a 9×13-inch pan. Bake for about 25 minutes or until thoroughly baked and let cool.
  • Unmold the cake from the pan and, if desired, scrape off the outer edge. Crumble the cake in a large bowl and mix in cream cheese frosting until well combined. If the mixture is dry, add some more frosting until it comes together.
  • Shape the mixture into 24 even balls using your hands or a cookie scoop. Insert a stick halfway into each ball and place on a baking sheet. Freeze for 10-15 minutes to firm up.
  • Place each color of candy melts (white, red, and green) in microwave-safe bowls. Microwave in 30-second intervals, stirring after each until melted. Avoid overheating. If too thick, add 1/2 teaspoon vegetable oil to loosen.
  • Dunk each cake pop into one color of melted candy, turning to ensure the coating covers evenly. Allow excess to drip off. Before the coating dries, sprinkle festive sprinkles over the top. Place the pops upright in a holder or in glasses to set.
  • Once the candy coating has hardened, your Christmas cake pops are ready to serve. Enjoy these festive treats with family and friends!
