After that, roll and cut your dough into the desired shapes (in this case, donuts!), and make your glaze during the short rise. Then work quickly but gently to mix and then knead your dough. Let it rise until it doubles, even if that takes more than two hours. Toward the end of the second (shorter!) rise, which happens after you’ve rolled and cut the dough into donut shapes, begin to heat your oil. When it reaches 350 degrees Fahrenheit, it is ready to fry these beauties until they turn golden brown (don’t overcrowd the pan!). Ingredients
- 3 1/4 cups all-purpose flour
- 4 1/2 tablespoons granulated sugar
- 2 1/4 teaspoons active dry yeast
- 1/2 teaspoon salt
- 1 cup whole milk plus more for glaze
- 3 1/2 tablespoons unsalted butter
- 2 1/2 teaspoons vanilla extract
- Vegetable oil for frying
- 1 1/2 cups powdered sugar
- 1/3 cup cocoa powder
Instructions
- In a mixing bowl, combine flour, sugar, yeast, and salt. In a small pot, heat milk and butter until the butter melts. Stir in vanilla extract.

- Pour the milk mixture into the dry ingredients and mix until a dough forms. Knead until smooth and elastic, about 5 minutes.

- Place the dough in an oiled bowl, cover, and let it rise until doubled in size, about 1-2 hours.

- Roll out the dough to 3/4-inch thickness, cut it into donut shapes, and let rise again for 30 minutes. Heat oil to 350°F and fry each donut until golden. Drain on paper towels.
