When someone comes over to visit I think that you should have something baked for them.

It does not always happen that I am able to do this, but I do try. I love to cook and bake for people. It is my way of saying that I love them. I really, really love them when they show up and I have this little baby for them. My house smells cinnamony and chocolaty and heavenly. I have made this cake many, many times (sometimes it appears for Christmas morning breakfast) and it never disappoints. The egg whites threw me off the first time, I had never made a coffee cake with beaten egg whites before, but this cake is tender and light. The cinnamon sugar mixture sparkles and makes a nice crunchy top. Make yourself a steaming cup of coffee or tea and invite someone you love over to share this coffee cake with you.

We made this for Anne, Clay’s speech teacher. We love her very much and wanted to make her a nice treat. She is so wonderful with Clay and got him talking! We are so grateful for her.

Ingredients

For the cake:

  • 1 stick butter at room temperature
  • 1 1/2 cups sugar
  • 3 eggs, separated
  • 1 1/2 teaspoons vanilla
  • 2 cups (16-ounces) sour cream
  • 3 cups flour
  • 1 teapoon baking powder
  • 1 1/2 teaspoons baking soda

To assemble:

  • 1 bag chocolate chips
  • 1/2 cup sugar
  • 1 teaspoon cinnamon

Instructions

Step 1: Grab 3 little helpers. In the bowl of the mixer, whip the egg whites until they are stiff. Take out of the bowl and set aside. I really need another bowl for my mixer.

Step 2: Sift the dry ingredients together in a bowl. Set aside. Cream together the butter and sugar. Mix in the egg yolks and vanilla.

Step 3: Add 1/3 of the flour mixture.

Step 4: Add 1/2 of the sour cream. Mix until combined and repeat until you have added all of the dry ingredients and sour cream.

Step 5: Fold in the beaten egg whites.

Step 6: Spread half of the cake batter into a greased 9×13 pan. Sprinkle with the half of the cinnamon and sugar and half of the chocolate chips.

Step 7: Add the rest of the cake batter, cinnamon sugar mixture, and chocolate chips.

Step 8: Bake in a preheated 350 degree oven for 40 to 50 minutes. When the cake is done, a tester will come out clean. Cool on a cooling rack.

Step 9: Look at the layers of chocolate and cinnamony goodness. My oh my.
