Boursin Cheese Chicken Pasta
Ingredients
- 4 ounces dried pasta
- 1 tablespoon olive oil
- 4 ounces chicken fillet diced
- 2 cloves garlic chopped
- 1/4 cup dry white wine
- 2 ounces Boursin cheese
- 2 tablespoons Parmesan grated
- 1 tablespoon fresh parsley chopped
- 1 pinch freshly ground black pepper
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to the package instructions.

- While the pasta is cooking, heat the olive oil in a large skillet and add the diced chicken. Cook the chicken for 2 minutes on each side until golden brown. Add the chopped garlic to the skillet and continue to cook for another minute until fragrant. Stir in the white wine and cook until the alcohol evaporates.

- Add the Boursin cheese and some of the pasta water to help dissolve the cheese. Stir the sauce until the cheese has melted and lower the heat to a simmer. Simmer for 4-5 minutes until the sauce thickens.
