This Vidalia onion with blue cheese is the perfect thing to serve with a grilled steak and asparagus. In fact, it was the first meal that I served here in our new home in Kansas.

When I was in college, I worked at a restaurant called the Hatteras. They had amazing food, and I think the owners played a large role in teaching me what good food was all about. They used local and seasonal ingredients before it was cool to do so. They used the best ingredients that they could get their hands-on, and it made every meal there truly delicious. The restaurant was a nutty place to work, they were crazy days for sure, but so much fun. Some of my closest friends were made there, and even though the restaurant closed its doors many years ago, we still hang out whenever we can. This grilled onion comes from my Hatteras days, it was served alongside our beef tenderloin, and I make it every summer. I think that I have served literally thousands of these babies in my day, and I have never tired of looking at them. I cannot say the same thing about crab cakes (even though I love them too). This Vidalia onion with blue cheese is the perfect thing to serve with a grilled steak and asparagus. In fact, it was the first meal that I served here in our new home in Kansas.

This is more of a method and less of a recipe. It truly depends on how many people you want to serve. If you cannot find Vidalia onions, use another variety of sweet onions. You will want to slice the onion fairly thick because you want the onion to stay together on the grill. If they do not, no worries, they still taste delicious if they have fallen apart. I love Maytag blue cheese and use it whenever I can. It is a crumbly American blue cheese and you can find it in most grocery stores.

Blue Cheese Vidalia Onion Ingredients

  • Vidalia onions
  • olive oil
  • salt and pepper
  • Maytag blue cheese
  • panko crumbs

How to Make – The Steps

Step 1: Preheat your grill to medium-high heat. Slice the onions into thick slices. Brush both sides with olive oil.

Thinly sliced onion rings on a white plate with olive oil in a small ramekin, ready for cooking or salad garnish.

Step 2: Grill the onions until they have grill marks and start to soften.

Grilled onions and steak on a barbecue grill; perfect for outdoor cooking and grilling recipes.

Step 3: Put the onions on a piece of tin foil on a baking sheet. Sprinkle the tops of the onions with panko crumbs and blue cheese. Season well with salt and pepper.

Deviled eggs topped with chopped eggs and seasoning, baking on a foil-lined tray. Perfect appetizer or party snack.

Step 4: Put the onions under the broiler until the cheese melts and the crumbs start to brown.
