The secret to great meatballs isn’t the meat; it lies in the breadcrumbs. Using breadcrumbs in meatballs is a game changer. They work like sponges, soaking up all the juices and keeping the meatballs moist and tender. Without breadcrumbs, your meatballs can end up dry and dense rather than moist and juicy. Breadcrumbs also play a role in holding everything together, preventing your meatballs from falling apart while cooking. Additionally, they contribute to the soft texture of a meatball. If you are gluten-free, don’t worry—you can use gluten-free breadcrumbs for the same result or try meatballs without breadcrumbs, a recipe that substitutes parmesan for breadcrumbs.

Ingredients
- 1 pound ground beef 85% lean
- 1/2 cup breadcrumbs
- 1 large egg
- 1/4 cup milk
- 1/4 cup finely chopped onion
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 1/2 cups BBQ sauce
Instructions
- Preheat your oven to 400 degrees F.
- In a large bowl, mix together the ground beef, breadcrumbs, egg, milk, chopped onion, salt, black pepper, and garlic powder until just combined.
