Yum, yum – meatballs. Who can forget Disney’s classic “Lady and the Tramp” scene where the romantic puppies join in an awkward kiss while sharing a plate of spaghetti and meatballs? It’s been copied countless times. But of course, the dish isn’t just for cartoon canines.

The meatballs are the clincher of the dish, at least in my opinion. Packed with protein and flavor, meatballs are a global favorite. Swedish meatballs and Vietnamese bun cha appear in restaurant menus all over the world. But where did meatballs come from originally? Most seem to think it was Rome, but that is debated. Others say Persia, from where their kofta (often made from a combination of ground beef and lamb served up in small bites) have spread across the Middle East and further afield. Wherever they came from, they’re undeniably tasty, and this Meatballs without Breadcrumbs recipe will hit the spot for diet-conscious carnivores.

Ingredients
  

  • 1 pound ground beef 85% lean
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup finely chopped yellow onion
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil for cooking

Instructions
 

  • In a large mixing bowl, combine ground beef, egg, grated Parmesan cheese, chopped onion, parsley, salt, garlic powder, oregano, and black pepper.

  • Mix the ingredients with clean hands until well combined, but be careful not to overmix to avoid tough meatballs.
  • Form the mixture into 1 1/2-inch meatballs, rolling them between your palms to create a smooth surface.

  • Heat olive oil in a large skillet over medium heat. Once hot, add the meatballs in batches, making sure not to overcrowd the pan.

  • Cook the meatballs for about 10 minutes, turning occasionally, until they are browned on all sides and cooked through to an internal temperature of 160°F.
