Apple Cobbler is one of my all-time favorite comfort foods. I love the way that my house smells when I make it, and I love how comforting it is.

Apple Cobbler is one of my all-time favorite comfort foods. I love the way that my house smells when I make it, and I love how comforting it is. Right now, my house is quiet, everyone is asleep. It is dark and a very rare rainy night. All I really want right now is this Apple Cobbler. And maybe a steamy cup of coffee.

This recipe is a hybrid of two other recipes that I really love. The filling is the filling from my Apple Pie and the cobbler part is from my Peach and Blueberry Cobbler. One night I was thinking about how much I loved both things and I got the brilliant (if-I-do-say-so-myself) idea to marry the two and this heavenly creation was born. I know that this is a good cobbler because I do not even want to put ice cream on it.

It is as if Mark Darcy is saying to Bridget, “I like you just the way you are.” It is perfect. Now I want to hunker down on the couch and watch Bridget Jone’s Diary. V. badly.

Apple Cobbler Ingredients

Apple Filling:

  • 2 1/2 pounds Golden Delicious apples, peeled and sliced
  • 3/4 cup sugar
  • 2 to 3 Tablespoons of flour
  • 1 Tablespoon lemon juice
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon freshly grated nutmeg
  • 1/8 teaspoon salt
  • 2 Tablespoons butter

Cobbler:

  • 1 cup flour
  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon salt
  • 1 Tablespoon baking powder
  • 6 Tablespoons cold butter
  • 1/4 cup boiling water

How to Make

Step 1: Peel and core your apples. I used my old-fashioned apple peeler.

Step 2: In a large bowl, combine the apples, sugar, flour, lemon juice, salt, cinnamon, and nutmeg. Let the mixture stand for 15 minutes, stirring occasionally.

Step 3: In another bowl, combine the flour, sugars, salt, and baking powder.

Step 4: Cut in the butter using a pastry cutter or a fork. When it resembles peas or coarse sand, pour in 1/4 cup of boiling water. If you notice in the picture, I used the wrong size measuring cup and had to start all over again. Oops. V. bad.

This is what it is supposed to look like when you add the correct amount of water.

Step 5: Spread the apples in a baking dish (I believe this is a 10-inch round) and dot with butter.

Step 6: Cover with the cobbler batter. Bake in a preheated 425-degree oven for 25 minutes, or until the top is golden brown and the apples are bubbly.
