In a large mixing bowl, combine the ground turkey, chopped onion, egg, garlic powder, salt, and black pepper. Mix until just combined—avoid overmixing, which can make patties tough.
Divide the mixture into four equal portions and shape each into a patty that’s about 1/2 inch thick for even cooking.
Heat your chosen oil in a large skillet over medium heat until shimmering.
Add the patties to the skillet in a single layer.
Cook the patties undisturbed for 7–8 minutes per side, or until the patties are golden brown and an instant-read thermometer reaches 165°F in the center.
