In a separate bowl, cream together softened butter and 1 1/4 cups sugar until light and fluffy.
Beat in egg and vanilla extract until well combined.
Gradually blend in the dry ingredients until just mixed.
Roll dough into tablespoon-sized balls, then roll in remaining 1/4 cup sugar.
Place on parchment-lined baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes, until edges are lightly golden.
Let cool on baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
