Ingredients
  

  • 5 ounces fresh baby spinach
  • 2 small apples cored and thinly sliced
  • 1/2 small red onion thinly sliced
  • 1/2 cup chopped walnuts toasted
  • 1/3 cup dried cranberries
  • 3 ounces crumbled goat cheese
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons apple cider vinegar
  • 2 teaspoons honey
  • 1 teaspoon Dijon mustard
  • 1 small garlic clove minced
  • Salt and black pepper to taste

Instructions
 

  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, minced garlic, salt, and black pepper until well combined.
