Soft Whole Wheat Caramel Chip Cookies

Ingredients
  

  • 6 Tablespoons butter room temperature
  • 1/3 cup sugar
  • 1/2 cup light brown sugar
  • 3 Tablespoons honey
  • 2 teaspoons vanilla
  • 1/2 teaspoon espresso powder
  • 3/4 teaspoon salt
  • 1 Tablespoon apple cider vinegar
  • 1 egg
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 2 cups white whole wheat flour
  • 2 cups chocolate covered caramel chips
  • 1 cup semisweet chocolate chips

Instructions
 

  • Preheat oven to 350°. Line 2 baking sheets with parchment paper.
  • Cream together butter, sugar, light brown sugar, honey, vanilla, espresso powder and salt until light and fluffy, about 2 minutes. Scrape the bowl.
  • Add vinegar, egg, baking soda, and baking powder. Mix until combined. Add in the flour and mix until just combined. Stir in chips.
  • Drop a tablespoon of dough onto baking sheets. Bake for 10 to 11 minutes, or until the edges barely begin to brown. They may look a little under cooked, but that’s okay. Take the cookies out of the oven and let cool on the pans for 10 minutes before transferring to a rack to cool.
