Ingredients
  

  • 1-2 lb. skin-on salmon fillet
  • Kosher salt to taste
  • Freshly ground black pepper to taste
  • 1 lemon cut into rounds
  • 1 1/2 cups low-sodium vegetable broth
  • Juice of 1/2 lemon
  • 2 tablespoons freshly chopped dill for garnish

Instructions
 

  • Prepare the slow cooker by lining it with a large piece of parchment paper.

  • Place a layer of lemon slices at the bottom of the slow cooker.

  • Cook on low heat for 2 hours, or until the salmon is opaque and flaky.
