In a small bowl, mix the salt, black pepper, garlic powder, onion powder, and dried thyme.
Rub the spice mixture all over the pork loin.
In a large skillet, heat olive oil over medium-high heat. Sear the pork loin for about 2-3 minutes on each side until browned.
Place the sliced onion and chopped garlic in the bottom of the slow cooker.
Place the browned pork loin on top of the onions and garlic.
In a small bowl, mix the chicken broth, soy sauce, and honey. Pour this over the pork.
Cover the slow cooker and cook on low for 6 hours, or until the pork is tender.
Remove the pork from the slow cooker and let it rest for 10 minutes.
Slice the pork and serve with the juices from the slow cooker.
For a thicker sauce, pour the cooking liquid into a saucepan. Bring to a simmer over medium heat. In a small bowl, mix 1 tablespoon cornstarch with 1 tablespoon water. Stir this into the saucepan and cook until the sauce thickens.
