Olive oil for brushing

kosher salt

freshly ground black pepper

basil pesto
store-bought or homemade

Instructions
Preheat oven to 375°F. Prepare quick salmon soak with 3 tablespoons of kosher salt in 4 cups of lukewarm water. Salmon soaks for 15 minutes.
Oil the baking dish, pat dry salmon, place in dish. Season each fillet.
Cover dish with foil, bake for 10 minutes. Remove foil, bake for 5-7 more minutes until salmon flakes easily.
Top each fillet with a tablespoon of basil pesto. Sprinkle with toasted pine nuts and lemon zest. Serve immediately.
