- 1/4 cup olive oil
- 1 medium lemon juiced
- Zest of 1 medium lemon
- 1 clove garlic minced
- 1 teaspoon dried oregano
- 2 pounds chicken thighs
- Salt and pepper to taste
- 1 cup cherry tomatoes cut into halves
- 1/2 cup kalamata olives cut into halves
- 1 red onion sliced
- 1/2 cup crumbled feta cheese
- 10 mint leaves
Preheat the oven to 350°F.
In a small bowl, whisk the oil, lemon juice, zest, garlic, and dried oregano.
Season both sides of chicken with salt and pepper and place in a medium oven-safe dish.
Pour prepared Greek-style dressing over chicken and let marinate for at least 1 hour.
Add tomatoes.
Bake for 35 minutes.
Once the chicken is done, remove it from the oven.
Top with olives, onions, feta, and mint
Serve immediately.
