Ingredients
  

  • 1/4 cup olive oil
  • 1 medium lemon juiced
  • Zest of 1 medium lemon
  • 1 clove garlic minced
  • 1 teaspoon dried oregano
  • 2 pounds chicken thighs
  • Salt and pepper to taste
  • 1 cup cherry tomatoes cut into halves
  • 1/2 cup kalamata olives cut into halves
  • 1 red onion sliced
  • 1/2 cup crumbled feta cheese
  • 10 mint leaves

Instructions
 

  • Preheat the oven to 350°F.
  • In a small bowl, whisk the oil, lemon juice, zest, garlic, and dried oregano.
