- 3 pounds russet potatoes peeled and cut into chunks
- 6 strips of bacon
- 1/2 cup milk
- 6 tablespoons unsalted butter
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/4 cup chopped fresh chives
Begin by boiling the peeled and chopped potatoes until tender, about 15 minutes.
While the potatoes cook, fry the bacon until crisp, then crumble it into small pieces.
Warm milk, butter, salt, and pepper in a saucepan until the butter melts.
Drain the cooked potatoes and mash them until smooth, leaving a few lumps for texture.
Stir the warm milk mixture, crumbled bacon, shredded cheese, sour cream, and most of the chives into the mashed potatoes.
Garnish with the remaining chives and serve warm.
