- 4 Scotch bonnet peppers chopped
- 1 small red onion chopped
- 6 garlic cloves chopped
- 4 stalks of scallions chopped
- 1/4 cup soy sauce
- 2 tablespoons brown sugar
- 2 teaspoons fresh thyme or 1 teaspoon dried thyme
- 1 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cinnamon
- 1/4 cup white vinegar
- Juice of one lime
Place all ingredients into a blender or food processor.
Blend until the mixture is smooth or to your desired consistency.
Transfer the sauce to an airtight container and refrigerate. Use as needed.
