- 8 slices bacon diced
- 1/4 cup finely diced onion
- 1/2 cup apple cider vinegar
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
Cook the diced bacon in a skillet over medium heat until crisp. Remove bacon and set aside.
In the remaining bacon fat, sauté the onion until translucent and soft.
Add the apple cider vinegar, sugar, salt, and pepper to the skillet with the onions. Stir until the sugar is dissolved.
Return the cooked bacon to the skillet. Mix well to combine all ingredients.
Cook for an additional 2-3 minutes, allowing the flavors to meld together.
Serve warm over your favorite greens or as a dressing for a spinach salad.
