Ingredients
  

  • 1/2 tablespoon olive oil
  • 1 cup chopped yellow onion about 1 small
  • 1 cup chopped sweet bell pepper about 1 medium
  • 1 lb ground beef
  • 1 1/2 teaspoons taco seasoning
  • Salt and pepper to taste
  • 6 large flour tortillas
  • 3 cups shredded Mexican blend cheese
  • 2 tablespoons butter

Instructions

  • Sauté veggies: In a large skillet, heat olive oil over medium heat. Sauté onions and bell peppers until they begin to soften, about 4-5 minutes.
