Ingredients
  

  • 2 boneless skinless chicken breasts
  • Salt and black pepper to taste
  • 4 cups romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber sliced
  • 1 avocado sliced
  • 1/4 cup red onion thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey

Instructions
 

  • Season chicken breasts with salt and pepper.
  • Preheat grill to medium-high heat and lightly oil the grates.
  • Grill chicken for 6-7 minutes on each side or until internal temperature reaches 165°F. Let rest for 5 minutes then slice.
