Ingredients
  

  • 3 cups fresh corn kernels from about 4 ears of sweet corn
  • 1 cup chopped red onion
  • 1/2 cup chopped fresh cilantro
  • 1 jalapeño minced
  • 2 medium limes juiced
  • Kosher salt and black pepper to taste

Instructions
 

  • In a medium bowl, combine the corn, red onion, cilantro, jalapeño, and lime juice. Season with salt and pepper, to taste.
