Ingredients
  

  • 3 medium ripe bananas mashed (about 1 1/3 cups)
  • 1/4 cup honey
  • 2 large eggs at room temperature
  • 5 tablespoons olive oil or melted and cooled coconut oil
  • 1 1/2 teaspoons vanilla extract
  • 1 teaspoon apple cider vinegar
  • 1 1/2 cups chickpea flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (gluten-free certified)
  • 1/3 cup chopped walnuts

Instructions
 

  • Preheat your oven to 350°F. Line a 8x4-inch loaf pan with parchment paper.
  • In a large bowl, mix the mashed bananas, honey, eggs, olive oil, vanilla extract, and apple cider vinegar until the mixture is well blended.
  • In a separate bowl, whisk together the chickpea flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Gently fold the dry ingredients into the wet, mixing just until combined.
  • Fold in the dark chocolate chips and chopped walnuts.
  • Pour the batter into the prepared loaf pan and smooth the top. Bake for about 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely before slicing, approximately 1 hour.
