Ingredients
  

  • 8 ounces penne pasta
  • 6 slices bacon chopped
  • 1 pound boneless skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, cook the chopped bacon over medium heat until crispy. Remove bacon from skillet and set aside on a paper towel to drain.

  • In the same skillet, add olive oil and chicken pieces. Season with salt and pepper. Cook over medium heat until chicken is golden and cooked through, about 6-8 minutes.

  • Add minced garlic to the skillet and sauté for about 1 minute until fragrant.
  • Pour in heavy cream and chicken broth, and bring to a simmer. Allow to simmer for 5 minutes, or until the sauce begins to thicken.

  • Stir in the grated Parmesan cheese until melted and the sauce is smooth.

  • Add the cooked pasta and bacon back into the skillet. Toss to coat the pasta and chicken evenly with the sauce.

  • Serve hot, garnished with chopped parsley.
