Ingredients
  

  • 1 head cauliflower cut into small florets
  • 1/2 red onion finely chopped
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Instructions
 

  • Place the cauliflower florets in a large bowl.
  • Add the chopped red onion, cherry tomatoes, cucumber, and parsley to the bowl with the cauliflower. Toss to combine.

  • In a small bowl, whisk together the olive oil, lemon juice, Dijon mustard, garlic powder, salt, and pepper until well combined.
